My favorite attraction at the Walt Disney World Resort in Florida is the Carousel of Progress. It most certainly is not a thrill ride. Nor is it a ride from one of the Disney movies and one unlikely to become a movie. So, why would it be my favorite, and by far nonetheless? The answer may surprise some. For fans of Walt Disney, the answer will no doubt make perfect sense.
Over the years I have learned what is and isn't important in my life. With a global pandemic that hit home personally, as well as some new career moves I did not expect, the early 2k-20‘s were a great reminder of what I should make my priorities. For the best way to be able to focus on those important priorities, I look to Commonsense, Common Courtesy, and Common Decency. The "Common Cubed" always leads me to the inevitability of discovering the root of all things important.
As a huge fan and frequent guest at the Walt Disney World Resort in central Florida, I was quite broken hearted when the gates closed on March 15, 2020. The months following brought news of Cast Member layoffs and when they reopened in July that year, there remained unanswered questions about when all of the magic would return. Stage shows, parades, and night time extravaganzas were all indefinitely postponed or completely canceled. Since I was not able to visit the most Magical Place on Earth between March and September in 2020 (the first time I went after the reopening), I had to find new ways to enjoy the magic at home. Thankfully, just before the pandemic took over the world, Disney+ was introduced. So, one of the ways I could enjoy the magic at home was what I call the World Showcase Movie Series!

Shortly after my renaissance in 2021, my sister asked me to paint the famous Spaceship Earth attraction of EPCOT at the Walt Disney World Resort. My first attempt did not go well. So I used the canvas as a testing platform to try different colors and painting techniques. 2 years later, I decided to officially name the canvas and turn it into an official piece of my collection. What began as a seemingly failed painting turned into a work of art! As Bob Ross might say, a “happy little accident.”
One of my favorite places on Earth is the Most Magical Place on Earth, the Walt Disney World Resort in Orlando, Florida. And my favorite park at the resort is EPCOT. With a multitude of countries represented in the World Showcase, it is a foodie's paradise! For this recipe, we are entering the World Showcase and turning left into the Mexico Pavilion. Upon entering the pavilion, we quickly come to La Cantina de San Angel. At this location, you can choose from many entrées ranging from nachos to tacos. For me, I'm going to choose tacos! Specifically, Tacos de Camarón, or shrimp tacos. This recipe is inspired by that delicious option at EPCOT.
I use to judge a restaurant by its Chicken Parmigiana. In fact, there are a few places, none of which can I even recall their names now, that I have not been to since having a bad experience with this dish. As 2020 was "that" kind of year, I decided it was time to develop my own recipe of my favorite dish. This is that recipe! Once you've made it, feel free to judge my culinary skills!
